Hello, my name is Hilary. Let me tell you about what the carnivore diet did for me after years of ill health.
Starving but still overweight
I started struggling with my weight when I was a teenager. I was never the thinnest pre-teen or high school girl, but I was always a normal healthy weight. In my late teens and early 20’s, I ballooned to 230lbs only standing 5’6 tall. I desperately tried to lose weight by getting personal training, cutting calories, crash dieting, weight loss pills, weight loss wraps, you name it and I tried it! I had some success with these strategies, but it was always short lived. I was able to get under 200lbs and stay there for the latter half of my 20’s, but always creeping dangerously close to that dreaded 200lb marker. I tried weight loss programs where I counted calories, I tried mail order diet food that tasted terrible and always left me starving.
Symptoms before carnivore
At 30, I decided I had enough. I knew I needed to make a drastic change in my life.

Giving carnivore a shot
I began researching the low carb/ketogenic/carnivore diet regiments through YouTube videos, Instagram accounts, peer reviewed scientific articles, podcasts, and websites. I was terrified to try it and realized the psychological struggle was going to be severe. I committed to trying this way of eating (May 17, 2019) and my husband agreed to give it a shot, too. We have never looked back.

Weight loss and so much more
Yes, the weight loss is fabulous, but it is the psychological benefits that have kept me loyal to this lifestyle. I no longer have extreme depression or mood swings. I am not unpredictable and driven by food cravings. My marriage has been stronger as a result of this way of eating. Not only have I shed close to 40 pounds, I’ve eliminated the chronic pain in my lower back, I no longer suffer from joint inflammation, migraines are a thing of the past, and I see new growth on my thickening hair! I honestly can’t believe how beneficial this has been. If I had known sooner, I would have started this as a teenager and saved myself a lot of heartache and depression for over a decade. I look and feel younger, I look forward to my work and have reignited the passion for my profession.

HOW AND WHAT I EAT
I usually stick to one meal a day. The key to my success on carnivore has been combining intermittent fasting. It is really important for me to listen to hunger signals and I’ve come to realize that most of my eating was based on emotion and not a nutritional need. Once I tapped into my body’s signals, it was much easier to track how I felt and what I needed. I usually eat one large meal a day of steak, mozzarella cheese, and sometimes bacon and eggs. I supplement my water with electrolyte packets, and occasionally I take meat organ supplements to help balance my low hemoglobin levels. I’ve always suffered from anemia so I pay close attention to my numbers and test my blood using a ketone monitor daily.

Steve cures Irritable Bowel Syndrome with a carnivore diet
Up until going carnivore, I had IBS for as long as I can remember. It seemed like literally everything I ate made me feel bloated. I have sometimes prevented myself from going to social functions or dating because of the amount of gas my body would generate, especially if I ate foods that were particularly carby. Whenever I felt that happening, I had to find ways to get away from people to get some sort of release (the smells were horrible too – I wanted to get checked for SIBO) and it was so often that the whole concept was annoying and frustrating.
Originally, I was introduced to keto through a friend who was trying to lose weight and had great success with it. At that point, I only knew of the weight loss benefits, but research taught me all of the other good benefits that come from keto. My friend mentioned that he had very little, if any gas, on keto and hearing that piqued my interest. I didn’t want to lose weight, but I was willing to try something new to get a remedy for my bodily functions. Eventually, I switched and had decent success with keto and was loving it. There were a few times that I cheated and ate like I used to, but I immediately regretted it. I realized how much worse I felt eating the old way.
Further research led me to a community on Reddit called Zero Carb (r/zerocarb). At first, I thought these people were nuts. Where’s the fiber? Do they not get constipated all of the time? Coming from a healthcare background with an interest in nutrition, this was startling. I read over numerous threads just to see what these people were saying and to my surprise, constipation wasn’t an issue. In fact, there were anecdotes of people getting their Crohn’s & Hirschsprung diseases under control, or essentially cured as well as anecdotes of mental health issues getting better, of which I have mild ones. The next step was giving this a test run.
The first try wasn’t too bad, but the lack of variety (only because I hate cooking) was difficult for me. I stayed with keto, but started trying to introduce more meat into my diet and learning to cook (or just learning easier ways). Through trial and error and persistence, I’ve now gotten to where I eat 90-95% carnivore and it’s definitely the best I’ve ever felt.
I rarely have gas, I don’t get bloated, I have more energy without spikes or crashes, my head feels clearer, I sleep better – I feel like a new person. I understand this way of eating would be difficult for most people, but WOW has it been a game changer. I could never go back to the old way.
I only wish I’d started this sooner.

Amy healed psoriasis, yeast overgrowth, brain fog on carnivore diet
For the majority of my life I have tried to maintain a healthy lifestyle. i’ve eaten clean, exercised regularly, played often in the mountains and in the sun, practiced yoga and meditation, de-stressed with massage or acupuncture, used vitamins, supplements and oils and have maintained a regular, healthy sleep routine.
But I’ve continuously struggled MOST OF MY LIFE with the auto-immune disease psoriasis and various other frustrating health conditions. I have learned to manage these frustrations, but have been constantly discouraged with the lack of positive change or results regardless of my efforts. the pictures only represent a part of the story.
Besides having skin that is dry, flaking, and constantly irritated (all over my body), I have regularly experienced extreme muscle fatigue, chronic constipation and digestion issues/bloating, candida and yeast infections, cold sores, and dry/cracking lips, dry hair and nails, low energy, mild depression and mood swings, foggy-headedness, disorganized thoughts, memory issues, aura migraines, joint deterioration and aching joints, receding gums, and CONSTANTLY dealing with sinus infections, colds, or some sort of sickness… I have literally been sick at least 4 times a year for MY ENTIRE LIFE.
I have seen every type of practitioner you can think of… classical dermatologists, functional medicine doctors, Chinese medicine doctors, acupuncturists, energy healers, AND I have tried every type of treatment or home remedy I could find…celery juice, cilantro fasts (yes, it’s a thing), gluten-free, meat-free, and dairy free diets. I’ve also spent more money than you could imagine on prescription medication, lotions, potions, and even some gimmicks that have grand promises to heal me.
One year ago, out of complete desperation (and with a little support and information to get started from my sister), I decided to jump head first into the “carnivore” or “nose to tail” way of eating.
And this has completely transformed my life. It has taken a lot of experimentation, patience, and mindset shifts… But I believe this way of eating has healed my body from the inside out.
I am truly grateful for all the podcasters, doctors, anthropologists, scientists, health coaches, and regular people who have shared their own journeys and dedicated their time to helping others understand that this way of eating is the way we humans have evolved.
Not only has my psoriasis healed, but I have found profound improvements in other areas of my health as well: I haven’t been sick at all in the last 12 months (!!!), and all the symptoms I listed above have either completely healed or are at least 95% better and getting better each day. no more digestion issues or bloating, no more foggy-headedness, no more muscle fatigue, and no more yeast overgrowth. my sleep, focus, and mood have all greatly improved and I rarely have cravings or feel hungry. I feel motivated, energised, and overall healthier than I have EVER felt.
Here is what I eat daily:
- organic coffee
- organic heavy cream
- grass fed beef (fatty steak, roast, or ground beef)
- grass fed beef liver
- bone broth
- wild caught fish (mostly fatty salmon, sometimes tuna, shrimp, or scallops)
- salt
- sparkling mineral water
- mineral water
- magnesium powder
- beef organ supplements
Occasionally/rarely:
- egg yolks
- pickles
- blueberries
- avocado
- raw cheese
- dark chocolate
I still have some “cheats” here and there with a carb or veggie, but I have noticed over time that I don’t crave them, want them, or need them… and they don’t seem to affect me as negatively as they used to.
I am extremely grateful that I have stumbled across this way of eating and am happy to share my story with anyone who will listen 😉

Melissa improved energy levels, mental health, inflammation on carnivore diet
I am celebrating one year of carnivory, and so I thought it might be helpful to share and document the reasons for choosing this WOE, the symptoms I experienced before this WOE, my background and the current benefits I’m enjoying thus far.
I freaked out and began training and coaching track and field, so I was able to keep my weight down, however, other symptoms began to arise; inflammation, sore joints, back, neck, etc. I chalked it up to years of weight lifting and beating myself up, and decided I just needed to “keep moving” to distract from the pain. This would go on for more than a decade, with weight fluctuating and exercise increasing to help stave off extra weight and joint pain.
Mind you, I did not do this for animal ethical reasons, I just truly believed plants were the answer and key to good health. My sister and I even started a blog about it. We were serious evangelists (in our small social media circle). We’d converted several of our family members and friends to start juicing and eating more plants. My sister, while not as strict as me, lost 70 lbs and became a personal trainer, so people were seeing the changes in both of us and became convinced there was some validity to what we were doing.
I would crave eggs and meat, and would cave in and “indulge,” but would feel guilty eating them because I seriously thought I was harming my body with all the protein and fat, when in actuality my body was yelling at me exactly that! Add to that, my dental and mental (ha, that rhymed) health started to go south, with three chipped teeth, and anxiety and depression to boot.
Meanwhile, my mother was suffering from cancer, and she sadly died in December 2017. I was thankful to be able to be with her so intimately her last days, but it was a shock on so many levels to us. Three months later, we moved 2,000 miles away where my husband had found a job.
They both intrigued and frightened me. All meat? Surely this was going to kill me or give me cancer, and fast! But after reading so many testimonials on meatheals.com, and even though I didn’t know everything, I felt confident that even if this WOE would give me fewer great days than many horrible ones, I decided at least a 30 day experiment would be in order.
- I am 31lbs lighter (I went from 207lbs to now 177lbs). Not a lot for some on this diet, but my body composition has changed dramatically, where I’ve lost incredible amounts of inches!
- Bloodwork came back great, all the things within normal ranges, and my thyroid panel is completely normal!
- No more fatigue or regular naps during the day after doing nothing
- NO MORE JOINT PAIN or INFLAMMATION!
- Mental health is fantastic.
- Skin is smoother, tighter and tanner (instead of burning easily in the past)
- Little to no pms
- Consistently satiated
- More emotionally stable. Feel more confident about life and looking forward to the future.

Jodelle improved hypothyroidism on carnivore diet
Jodelle’s bloodwork revealed she had hypothyroidism. After receiving the news, she adopted a strict carnivore diet, eating only meat. Her results were life-changing, and she was able to heal in numerous ways.
Hypothyroidism is a condition in which the thyroid gland is underactive and doesn’t produce enough thyroid hormone. When someone is deficient in thyroid hormones, their heart rate, body temperature, and metabolism are often irregular. Jodelle experienced some common symptoms of hypothyroidism, such as fatigue, dry skin, and unexplained weight gain.
In an effort to bring back normal function to her thyroid, Jodelle adopted a carnivore diet to see if she could reverse the condition without having to take thyroid replacement medication. Risks of treatment can include osteoporosis, weight gain, joint pain, autoimmune issues, and changes to the menstrual cycle.
After implementing the diet, Jodelle noticed numerous improvements in her health that can be associated with better thyroid function. “Based on my results, I am convinced now that the all-meat diet is the absolute very best thing I can do to heal my thyroid!”
One of the most welcome changes for Jodelle was the return of her menstrual cycle. When the thyroid is being attacked by the immune system, sometimes the ovaries are affected as well, causing amenorrhea, the loss of the normal menstrual cycle. If not treated, it can lead to early menopause before age 40.
Thankfully, Jodelle was able to restore normal menstrual function once she switched to eating only meat for several months. “My period came back after seven months of not having one!”
As Jodelle’s body began to heal, she was sleeping better than ever and noticed outward signs of healing as well. “My skin, hair, and nails are now smooth and shiny. My hair and nails are growing super fast, and I no longer have dry skin.”
Jodelle’s mental health is also better since she eliminated plant foods from her diet. “My anxiety is gone, period!” She had previously suffered from mild-to-moderate anxiety since she was 15 years old. “My mood is through the roof! I’ve always been a happy person, but I don’t have any anxiety anymore.”
Jodelle improved her strength training and is building more muscle following Dr. Shawn Baker’s fitness program, CTS (Carnivore Training System.) “My workouts are stellar! I’m progressing with weightlifting and implementing Dr. Baker’s CTS program with great results.”
The goal of the program is to provide muscle conditioning, stamina, and the ability to move quickly through sprints. With this system, Jodelle is convinced that fitness and nutrition should be simple.
While limiting oneself to eating animal products may seem restrictive, Jodelle has found freedom on a carnivore diet. She encourages her followers to “think logically” about nutrition and not overcomplicate things.

Justin healed skin rashes on a carnivore diet
Hi, my name is Justin. My story is pretty intense and spans practically my entire life.
Issues from birth
I am a c-section baby and for as long as I can remember I have been sick. As a young child my autoimmune issues weren’t so severe. Minor eczema, canker sores. But I did showcase autistic tendenciess and always had severe anxiety and mood problems. When I was eight years old I started noticing stomach pains and was frequently going to the bathroom.
Eating crap with Crohn’s disease
I was diagnosed with Crohn’s disease at 10 years old and for four years struggled greatly with it. I was eventually put on Remicade and was declared in remission. I tried eating healthy but had a horrible relationship with food. I ate like crap and partied a ton during my 20s. I became very interested in sustainability and when I was 26 decided to do a high carb vegetarian diet. I lost a ton of weight. But then things started getting weird.
Body going numb
My left side of my body started becoming increasingly numb. An MRI determined I had a brain stem Cavernoma. It was not related to my diet, the doctors said. My symptoms got progressively worse and in the summer of 2017 I had a hemmorrhagic stroke. An emergency surgery removed half of the cavernoma. I found the Keto diet during my recovery and lost 60 pounds. But symptoms returned. My surgeon told me a 2nd surgery would be required. It was a success and the cavernoma was removed.
Litres of olive oil
I read The Plant Paradox 10 months ago and decided not to continue with my Remicade treatments. I followed the diet well, even consuming a litre of olive oil a week. At first I felt great. Then the rashes showed up. Then I couldn’t muster up the energy to get out of bed. I was depressed. When a big rash that smelled like cheese appeared on my left armpit, I knew something was up. It was Candida. I was also experiencing horrible SIBO. I was worried my Crohn’s would soon rear it’s ugly head again. I had heard about the carnivore diet but thought it couldn’t be legit.
Everything better within a week
It was only after listening to Paul Saladino that I decided to give the diet a shot. Within a week the candida, rashes, and horrible digestion were gone. The depression went after that. And the anxiety and mood issues ? Wow! I can’t explain the difference. I’m just a happier person overall.
Interesting improvements
But here is where it gets interesting. I am starting to notice neurological improvements. I still have some nerve damage post brain surgeries. I’ve been on the diet for 8 months but have only started to notice real significant changes after switching to a steak , liver, and raw fat diet. I’m really curious to see how I progress as I continue with this diet.

Galen healed Crohn’s disease on a carnivore diet
Although I specifically asked the gastroenterologist for dietary advice at the time, he had no recommendations to offer, but prescribed me several anti-inflammatory and antibiotic drugs.
Abdominal pain and Crohn’s disease
In the Summer and Fall of 1995 I started intermittently experiencing extremely sharp abdominal pain. Over the course of several months, symptoms escalated to severe intestinal cramping and bleeding. A gastroenterologist ultimately diagnosed Crohn’s disease in January 1996, following the standard invasive diagnostic procedures (upper/lower GI scopes, barium enema, CT scan). Although I specifically asked the gastroenterologist for dietary advice at the time, he had no recommendations to offer, but prescribed me several anti-inflammatory and antibiotic drugs.
Difficult relation with drug treatment
At the time of diagnosis, I had just turned 21 years old, and I completely rejected the notion of having to take pills 4 times a day indefinitely. I quickly stopped taking the drugs after a couple months as my symptoms subsided. 9 months later, I relapsed with crippling chronic fatigue. My doctors returned me to the prescription regimen with the addition of a steroid. I was weaned off of the steroid over the course of several weeks. Again, as symptoms subsided, I stopped taking the prescribed drugs.
Unmanagable issues led to desperation
For the next 13 years, I remained symptom free with a whole lot of luck believing nutritional supplements had miraculously cured me. However, in December 2009, I again flared up with bloody stool and bouts of diarrhea and constipation. A gastroenterologist prescribed Apriso Mesalamine and another round of antibiotics. Throughout 2010, I reluctantly used the Apriso as needed. As I finished the prescribed amount, I would get refills only when I suspected a pending flare up.
By mid-2012, the flare-ups were becoming increasingly unmanageable, as I desperately pursued a remedy through self-treatment and experimentation. Having run out of ideas, I sought out a naturopath who had a personal history of IBS. The naturopath recommended higher doses of a couple supplements I was already taking and the addition of a couple more. The supplements helped reduce the severity of symptoms, but IBS flareups persisted.
Trying everything under the sun
For the next 5 years I practiced various dietary strategies including GAPS, low-carb high-fat restricted protein keto, low-lectin plant-based keto, juice fasts, bone broth fasts, and strict intermittent fasting. I felt significantly better eating low-lectin foods and practicing intermittent fasting. However I still could not digest many plant foods, and known trigger foods continued to cause IBS flareup.
Going strict carnivore
I learned of the carnivore diet hearing Dr Shawn Baker on several podcasts. I adopted the carnivore diet May 2018. I have not taken any prescription drugs since starting carnivore, and I have switched my supplements to desiccated beef organs. Today I have never felt better, and I remain symptom free eating strict carnivore.
