Tim is from St. Paul, Minnesota and for the most part, ate the standard American diet growing up. Not a lot of junk food but ‘healthy snacks” containing ingredients that were unknowingly causing him health issues such as ADHD and depression. He was really struggling to live and thrive. Tim and his family were fed up with a lifetime of prescriptions and surgeries from the pharmaceutical and medical industries so they started doing their own research.
He found out about Drs. Paul Saladino and Shawn Baker and decided that the carnivore lifestyle was more than just a fad. He started his carnivore journey out of solidarity with his mother who had suffered from psoriatic arthritis for 10 years. After she was on the diet for only two days, the pain in her hands went away. Within a week, the swelling was gone in her fingers and joints. Within a month she was feeling and sleeping better than she had in all of her 67 years.
Tim lost a total of 35 lbs., 20 of those in the first four weeks. In 15 years of being an athlete, he’d never felt or performed better. As a dietetics major, he never thought that eliminating carbs would lead to increased athletic performance. Skin, hair and nails have all improved as well. Tolerance to being out in the sun without sunscreen was an added benefit. All of that plus no more wheezing at night: being able to breathe through the nose because of cleared nasal passages.
He also had taken a number of psychiatric medications and mood stabilizers for bipolar disorder: pills to function in society, pills to function in the day, pills to function at night for sleep. He no longer takes any of those medications and feels now as if he’s in control of his own mind.
Tim’s diet is typically 2 1/2 to 3 lbs. of top sirloin steak daily with 1 or 2 teaspoons of grass-fed-butter or tallow. He also adds salmon roe. “Meat has healed me. Removing a lot of things (plants) that I once thought were healthful for me were destroying me from the inside out.”
He also placed a lot of importance on his electrolyte balance, especially potassium, magnesium and sodium but something was still missing. That something was organ meats. He felt that his body was lacking in micro-nutrients and so organ meats addressed this issue for him. He doesn’t eat organ meats daily but a few times a week which includes 8 oz of liver weekly. He follows an OMAD regimen.
Once Tim got away from following the bad advice of his doctors, he was able to get off of all medications by following a carnivore diet and he now says that he’s the healthiest he’s been in all of his life. Quite a difference from the prescription drug dependent person that he was for most of his young life only a short time previous. Tim hopes the whole world will benefit from seeing his example of a person who was transformed from unhealthy and prescription dependent to healthy and carnivore.
