Piggies and Kippers (Edwardian Inspired Recipe)

This recipe is inspired by Edwardian British middle class meals. Hearty and very simple! Fun for a quick lunch or dinner where you want to mix it up but stay strict carnivore.

Prep time: 10 min

Cook time: 1 hour

What you will need: 

1/2 cup pancetta

1 tin of smoked Kippers

1 lb of pork loin sliced length wise

First preheat your oven to 450 degrees while you prep your ingredients.

The place your sliced loin in a large oven friendly skillet. Leaving an open space in the center. 

Open your Kippers then place fillets in the center opening. Then fill in open spaces around loins with pancetta, any left over sprinkle over Kippers. 

If you live in a particularly dry climate or your oven bakes things dry easily you might wish to baste loins in butter. 

 

So simple, so quick, so clean carnivore! Enjoy!
