Zero-fiber carnivore breakfast muffins are made entirely from animal-based ingredients. This easy dairy-free breakfast idea is great for meal prep. The process is as easy as combining eggs with browned ground beef, adding a pinch of salt and baking in the oven until done!

Ingredients
- 9 large eggs
- 8 ounces ground beef
- 1 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly grease a standard size muffin tin.
- Brown the meat in a skillet over medium heat.
- Whisk eggs in a large bowl. Add meat and salt. Stir to combine.
- Divide the mixture evenly into the muffin tins. Fill each well ¾ full. Bake for 20 minutes until eggs set.
- Remove from oven and cool for 5 minutes. Release by running a knife around the edge of each muffin. Pop out and continue cooling on a wire rack or serve. Enjoy leftovers cold or reheat in the oven before serving.

I made this for my Grandsons. I used sausage and a small muffin tin to make them. They loved them! The 2 year old is not a fan of meat but gobbled theis down and they asked for them for snacks instead of cookies or sweets. We just told them they are egg muffins. I think they just heard muffin.

Made this today. Super easy. Pretty tasty! I might add some cheese in for a bit more flavour, but I liked them. Since starting the carnivore diet I’ve lost a fair bit of weight and I wasn’t that heavy to begin with. So I need to eat more I think and these help!
My question with this recipe is do you eat for the meat to cool down before mixing it with the eggs to avoid it cooking the eggs to soon so they aren’t over done when cooking additional 20 minutes? Sorry if I over looked this in the recipe…I have selective reading skills. Lol
