Ingredients
- 4 large eggs, room temperature
- ½ cup sweetener, see note
- 1 teaspoon vanilla extract
- 1¼ cups whole milk, raw if possible
- 5 tablespoons butter, cubed
Instructions

Preheat the oven to 350°F (175°C).

Beat eggs on high in a large bowl for up to 5 minutes, until thickened.

Gradually add the sweetener, continue mixing until light and fluffy. Mix in vanilla.

In a small saucepan, heat milk and butter for about 2 minutes over medium heat, just until butter melts.

Slowly add to eggs, beat until combined.

Pour unit a greased 8×8-inch (20×20-cm) baking dish. Bake for 40 minutes until a toothpick inserted into the center comes out clean. Cool before serving.
Notes
Strict Carnivore: omit sweetener and vanilla extract.
Keto Carnivore: use a keto sweetener.
Adding Carbs: omit sweetener and drizzle the top with raw honey after baking.

Is this supposed to harden? Mine was more like flan consistency. I liked the flavor; reminded me of pancakes in syrup!
I made it for my son’s birthday. It had a soft texture and was moist. We really liked it. It was like a more European kind of cake, which we like. So, it worked out for us. I used lemon extract and made a cream cheese topping for it, and it was really tasty. Filling, too. And way healthier than the processed toxic cakes at the local grocer bakery.

Made this for my kid’s birthday. My kids loved it, I loved it (skin was weird, but tolerable) but no one else did. Just do a cheesecake. Everyone loves cheesecake. If you can’t do dairy, this isn’t the recipe for you anyway. In that case, do an egg pudding with gelatin. Kids are happy with pretty much any sweet. They aren’t going to care as long as the candles stick up and he or she can blow them out.
The pictures in your 50 Recipes booklet were not curated at all. Lettuce, avocado & tomatoes in the salad. Real biscuits on the biscuit recipe, etc. Please reevaluate.

Any sweetener…stevia, agave, monkfruit, etc.
