For Jesús, growing up in Venezuela meant enduring extreme food scarcity and severe economic hardship. During national food shortages, government aid boxes provided only high-carbohydrate staples: corn flour, lentils, black beans, and vegetable oils, with almost zero access to meat, eggs, or fresh animal fats.
Despite consuming high volumes of low-fat carbohydrates like rice, pasta, and legumes to put on weight, Jesús remained undernourished. At 5’9″, his weight plunged to just 46 kilograms (about 101 pounds).
“I was eating low-fat carbohydrates trying to gain weight, but I was constantly foggy, exhausted, and incredibly thin,” Jesús recalls. “People around me laughed at how skinny I was.”
The situation escalated when, at just 22 years old, Jesús was diagnosed with non-alcoholic fatty liver disease (NAFLD) alongside recurring liver infections. His doctors expressed disbelief, assuming he must be eating a high-fat diet, and advised him to cut out fats even further.
Discovering Ancestral Physiology
Having previously studied medicine in Venezuela before being forced to halt his studies due to political instability, Jesús began researching human physiology and muscle building. After hearing Dr. Anthony Chaffee explain the biochemistry of plant defense chemicals and species-appropriate human nutrition, Jesús’s medical background clicked into place.
He recognized that his lean-mass wasting and liver inflammation were not caused by a lack of plant carbohydrates, but by severe nutrient deficiencies and high-glycemic plant anti-nutrients.
After relocating to Peru, Jesús made the decision to adopt a strict zero-plant Carnivore diet—basing his daily nutrition on affordable, pasture-raised ground beef (70/30 fat ratio), eggs, beef tallow, and butter.
The Timeline of Recovery
The biological impact of shifting to dense, nutrient-rich animal protein was immediate:
- FATTY LIVER RESOLUTION: At his 3-month medical checkup, diagnostic scans confirmed that his fatty liver disease had completely vanished.
- 13 POUNDS OF PURE MUSCLE: Fueling heavy strength workouts on pure animal fat and protein, Jesús gained 6 kilograms (13 pounds) of solid lean muscle within six months.
- ANXIETY & BRAIN FOG REMISSION: His chronic social anxiety, fidgeting, and mental fog cleared entirely, replaced by deep cognitive focus and steady daily drive.
- IMMUNE & HORMONAL STABILITY: His recurring liver infections stopped, and his baseline energy stabilized without energy crashes or cravings.
A New Mission for South America
Today, Jesús lives in Peru, consuming approximately one kilogram of ground beef and ten eggs daily while working as a health coach and content creator. His ultimate goal is to bring metabolic education back to Venezuela and broader South America, where millions suffer from undernourishment or hidden metabolic disease driven by refined carbohydrate rations.
For Jesús, stepping away from low-fat dogma wasn’t just a physical transformation—it was the key to reclaiming his strength, mind, and health.
“In Venezuela, we were fed corn flour, lentils, and seed oils. I ended up at 100 pounds with fatty liver disease at age 22. Switching to pure beef and eggs cured my liver in three months and built the lean muscle I could never gain on plants.”
