Russ grew up in rural Ohio surrounded by Amish and Mennonite farms, raised on raw dairy, home-grown vegetables, and half-cows stored in the family freezer. But after moving to California as a young man to work in construction, his lifestyle shifted. Years of heavy manual labor—pouring concrete and roofing under the Sacramento sun—took a massive physical toll.
By the 1990s, as he transitioned to office-based construction management, processed convenience foods, fast food, and beer began to dominate his routine. By his 50s, standing at 5’10”, his weight peaked at 245 pounds. “I was a bowling ball going down the street,” Russ recalls. “My body just hurt—my back, my joints, my legs. Years of construction took a heavy toll.”
