Eric: Red Meat Over Pills to Reclaim His Health

For Eric, a native of Canton, Ohio, turning 30 marked the beginning of a long, downward health spiral. Following the Standard American Diet, he gradually accumulated a laundry list of chronic metabolic and inflammatory conditions: severe gastroesophageal reflux disease (GERD), Barrett’s esophagus, obstructive sleep apnea, hypertension, persistent brain fog, and type 2 diabetes. Reversing the “Inevitable”

Desperate for a solution outside of standard pharmaceutical management, Eric spent the middle of the night researching his symptoms online. He discovered the concept of a ketogenic diet and immediately committed to under 30 grams of carbohydrates per day. The weight began to drop, and his energy returned.

 

Shortly after, a conversation at dinner introduced him to zero-plant carnivore nutrition. Recognizing that an animal-based framework aligned better with his goals, Eric transitioned his daily meals to focus almost exclusively on ruminant meats, eggs, sea salt, and water.

 

The biological turnaround over his eight-and-a-half-year journey was comprehensive:

  • TYPE 2 DIABETES REMISSION: Eric brought his HbA1c down from a dangerous 10.1% to a healthy 5.3%, eliminating his need for diabetes medications.
  • CARDIOVASCULAR RISK REDUCTION: While his LDL cholesterol rose—a common pattern among lean, fat-adapted individuals—his triglycerides plunged from 268 mg/dL down to 70 mg/dL. Subsequent Coronary Artery Calcium (CAC) scans confirmed zero calcified plaque buildup in his arteries.
  • SUSTAINED WEIGHT LOSS: Eric lost 60 pounds, shedding visceral fat while preserving functional lean muscle mass for heavy resistance training.
  • RESOLUTION OF SLEEP APNEA AND BRAIN FOG: The persistent cognitive fog lifted completely, and his sleep apnea resolved, allowing him to discard his CPAP equipment.

Firing the Status Quo

When Eric returned to his primary care physician for a routine check-up after his initial transformation, the doctor was thrilled with his lower weight and flawless blood markers, assuming Eric had followed his previous advice to adopt a low-fat, vegetarian lifestyle and stop lifting weights.

 

When Eric revealed he had done the exact opposite—eating exclusively animal proteins and continuing heavy resistance training—the physician panicked, insisting the diet would be fatal despite the pristine clinical results. Recognizing the contradiction, Eric found a new medical provider who supported his N=1 success.

Today, at 54, Eric runs No Carbs Nation on social media (@nocarbsnation), documenting his training and daily meals to encourage others dealing with metabolic disease. Sourcing much of his red meat locally through farm shares and family deer hunting, he trains with high intensity, plays with his two grandchildren, and enjoys a level of daily energy he didn’t possess in his 30s.
