Stephen: Ditching Plants for Peak Energy and Healing

For Stephen, a 51-year-old firefighter, the “standard” version of middle age was a terrifying prospect. By his late 30s, his 20s and 30s of “less-than-healthy” living began to catch up with him. He was 6’2″ and 260 pounds, struggling with obesity, depression, and severe anxiety.

 

The most frightening symptom, however, was his sleep apnea. “I would stop breathing just as I fell into deep sleep,” Stephen recalls. “The lack of oxygen would wake me up incoherent… I felt like I was literally dying.” He noticed a direct correlation between his symptoms and high-carbohydrate, ultra-processed meals like pasta, beer, and bread. He knew he didn’t want a life of pharmaceutical intervention; he wanted a way out.

 

The “Optimal” Challenge

Stephen’s recovery began with a Paleo diet, which helped him drop 70 pounds in eight months. His sleep apnea vanished, and his mental health stabilized. But it was a friend’s question five years later that changed his trajectory: “Steve, you’re plenty healthy, but do you want to be healthy or do you want to be optimal?”

 

This lit a fire in him. He moved from Paleo to Keto, and eventually to a strict Carnivore diet while prepping for a bodybuilding show. It was meant to be temporary, but the results were undeniable. Stephen had suffered for years from shoulder impingement and chronic “golfer’s elbow” in both arms. Within two weeks of cutting out plants, his shoulders healed completely. Within eight weeks, the elbow pain was gone.

 

“Father Time” at the Fire Academy

The true test of Stephen’s new biology came at age 49, when he decided to enter the Fire Academy. Surrounded by recruits half his age, Stephen was told he “needed carbohydrates” to perform the grueling physical tasks required.

 

The result? He absolutely smoked the competition. Dressed in 75 pounds of gear and working in 500-degree simulated fire structures, the man the instructors called “Father Time” proved that fat-adapted energy is superior to sugar-burning.

 

THE PERFORMANCE: Stephen out-ran and out-worked recruits in their 20s, proving that strength and endurance don’t have to decline with age.

 

THE SIMPLICITY: Fueling on just a pound and a half of fatty red meat, eggs, and butter a day, he maintains a lean, muscular 200-pound physique.

 

THE RECOVERY: Stephen found that cutting caffeine and oxalates resolved his lingering brain fog and acid reflux, allowing him to sleep through the night with vivid, restful dreams.

 

A Mission of Education

Today, Stephen is a certified Carnivore Nutrition Coach under the handle Carnivore Coach Invictus. He is no longer just interested in his own results; he is studying the biochemistry of nutrition to combat the “false narratives” of mainstream health influencers.

 

For Stephen, Carnivore isn’t a “tool” or a “hack”—it is the ancestral baseline for the human species.
