Hi, my name is Stephanie Holbrook (51 years old). I have been an endurance athlete since 2003. When I started endurance sports training I followed the standard endurance athlete high carbohydrate and a low-fat diet. This diet gave me chronic asthma, allergies, IBS, and skin conditions. This led to chronic injuries that forced me to quit endurance sports.
I didn’t think I would be able to do any endurance sports ever again. I first found the paleo diet, then keto, and finally carnivore.
Since I’ve changed my diet I was able to regain my health and start training again. I’ve done century bike rides, bike races, half-marathons, and sprint triathlons since I adopting a carnivore, meat-based, diet. I recently hiked Rim to Rim at the Grand Canyon in one day, and I am training for the Coeur d’Alene Ironman (140.6) in June 2021.
I became a USA Triathlon and USA Cycling coach to help athletes just like me to improve their health and fitness.
Are you an endurance athlete who wants to improve your health and switch to a meat-based diet? If so, I would love to help you reach your health, fitness, and performance goals.
Certifications in addition to the Carnivore.Diet Certifications:
- USA Triathlon Coach
- USA Cycling Coach

Booking an appointment with Stephanie is one of the best things I’ve ever done. Since I’m a cyclist and doing carnivore she seemed like the coach to talk to. Her knowledge of sports specific training combined with this woe is impressive. Stephanie took the time to understand my situation and goals, then gave me excellent information to help me get my training and diet on track.

Stephanie is very down to earth and so easy to talk with. She is also a great listener and was able to give me answers to concerns I didn’t even know I should be aware of! The extra bonus for me was that Stephanie had a specific knowledge base in dealing with our aging population, and gave me not only the science but great anecdotes that encouraged me as I bring my 95-year-old father along on my carnivore journey. I now feel much better equipped and more confidant in dealing with my specific health issues and making the right choices to improve my transition experience.

Stephanie is so knowledgeable, was able to answer every question I threw at her. And she’s just fun to talk to. I really appreciate her sports background in addition to her carnivore diet expertise. Stephanie helped me get thru my diet transition and the impact it made on my running. Not sure I would have succeeded without her help.

Stephanie is a joy to talk too. She brings the athletic side to Carnivore which is what I needed.
She has a lot of hands on experience with nutrition and endurance training. That personal experience is very helpful to hear when you begin your journey.
Looking forward to my first Triathlon as a Carnivore

I enjoyed my session with Stephanie. I am a fully fat-adapted endurance athlete and am training for a marathon, with the intention of qualifying for Boston. Stephanie helped me formulate a plan to introduce a small amount of carbs during my substance training sessions so that I am ready for the big race. What stood out was when Stephanie noted that it will take one year to achieve ful fat-adaptation to the point where I will no longee need to rely on carbs for speed. After about a year of full fat-adaptation, my performance will significantly improve running on fat alone. That’s huge for me, and I am already counting the months LOL. Thank you, Stephanie. Cheers
