Hi, my name is Stephanie Holbrook (51 years old). I have been an endurance athlete since 2003. When I started endurance sports training I followed the standard endurance athlete high carbohydrate and a low-fat diet. This diet gave me chronic asthma, allergies, IBS, and skin conditions. This led to chronic injuries that forced me to quit endurance sports.

I didn’t think I would be able to do any endurance sports ever again. I first found the paleo diet, then keto, and finally carnivore. 

Since I’ve changed my diet I was able to regain my health and start training again. I’ve done century bike rides, bike races, half-marathons, and sprint triathlons since I adopting a carnivore, meat-based, diet. I recently hiked Rim to Rim at the Grand Canyon in one day, and I am training for the Coeur d’Alene Ironman (140.6) in June 2021.

I became a USA Triathlon and USA Cycling coach to help athletes just like me to improve their health and fitness.

    I enjoyed my session with Stephanie. I am a fully fat-adapted endurance athlete and am training for a marathon, with the intention of qualifying for Boston. Stephanie helped me formulate a plan to introduce a small amount of carbs during my substance training sessions so that I am ready for the big race. What stood out was when Stephanie noted that it will take one year to achieve ful fat-adaptation to the point where I will no longee need to rely on carbs for speed. After about a year of full fat-adaptation, my performance will significantly improve running on fat alone. That’s huge for me, and I am already counting the months LOL. Thank you, Stephanie. Cheers
