Carnivore Pizza Mini Rounds (Inspired by WWll recipe)

Great recipe for packed lunches or traveling!

Makes: 6
 
Ingredients
  • 1 lbs ground beef
  • 6 pieces pepperoni
  • 1 cup shredded mozzarella
Instructions
  1. First mold 6 ground beef disks. I find they cook best if they are no thicker than 1/2 inch, and no larger than 4 inches across.
  2. Lay disks flat on a cookie sheet and pre bake for an hour and a half at 200 degrees. They should become very dehydrated and a rich dark color, as well as shrink some.
  3. Then remove from the oven and place cheese and pepperoni on top and pop back in the oven until brown (around 20 min).
These also are wonderful bases for lots of creativity. So go crazy! Enjoy!

Breakfast Egg Taco

Serves: 4 soft chicken tortillas

 

Ingredients

  • 8-12 eggs
  • 1 Tbs butter
  • ½ pound diced bacon, sausage or other leftover meat
  • 4 ounces of your favorite cheese
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  • Heat your pan to a medium heat.
  • Cook your meat of choice in the pan.
  • Add in the butter and mix in the eggs, salt and pepper. 
  • Continue to cook the eggs until they are set.
  • Stir in cheese until melted. Remove from heat.

If your tortillas are too firm to fold, heat them up slightly in a pan on medium-low heat.

Load your tortillas up with your scrambled egg filling.  Serve with your favorite hot sauce or enjoy as is.  You can also wrap these up in foil and take them with you. They hold fairly well.

Italian Meatballs

Ingredients

  • 1 pound ground beef, or ground meat of choice
  • 1 tsp garlic
  • ½ tsp basil
  • ½ tsp rosemary
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp all purpose seasoning

Instructions

  • Preheat oven to 375 degrees.
  • Mix all ingredients thoroughly in a bowl. 
  • Divide the meat into fours. Then divide each quarter into three to make evenly sized meatballs.
  • Roll into meatballs and place on a parchment lined sheet pan at least 1 inch apart.
  • Bake for 30-35 minutes.

Enjoy with carnivore egg noodles and garlic butter or alfredo sauce. These are great on their own as well.

 

Chili Stew

Ingredients

  • 2 pounds ground beef or chili meat
  • 2 cups beef broth, or 1 cup bone broth jello and 1 cup water
  • 1 Tbs apple cider vinegar or mustard
  • ¼ cup chili powder
  • 1 Tbs salt
  • ½ Tbs black pepper
  • ½ tsp salt free all purpose seasoning
  • 1 tsp hot sauce (optional)

Instructions

  1. Mix all ingredients into the slow cooker.
  2. Cook on high for 1 hour. Stir at the 1 hour mark.
  3. Continue to cook on high for 2 more hours or cook on low for 4-6 hours.
  4. Serve with sour cream and shredded cheese if desired.
  5. Also, goes well with chicken and cheese muffins.

Serves 2-4.

Egg in a Burger Basket

Ingredients

  • 1 pound ground beef, or any ground meat you like
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Take ½ pound ground meat and shape it into a large thin donut with a hole bigger than you would like. Shape the burger thinner than you would like because the meat will shrink and cook into a thick burger. Repeat with remaining burger meat.
  2. Season your burgers and cook in a cast iron pan.
  3. Once you flip your burger, let it cook one minute and carefully crack your egg in the middle.
  4. Season your egg, if you’d like.
  5. Cover with a lid and cook until desired egg doneness. Or you can cook low and slow if you don’t have a lid.

This goes really well with homemade hollandaise sauce.

Your Favorite Stuffed Burger

Makes 2 burgers.

 

Ingredients

  • 1 pound of your favorite ground meat (beef, turkey, lamb, bison, elk, etc.)
  • 4 ounces of your favorite cheese (shredded cheese will be hard to work with, slices or soft cheese works better)
  • ½ tsp salt
  • ½ tsp pepper (optional)

Instructions

  1. Divide the ground meat into 2.
  2. Shape the ground meat into a larger burger, wider than you would like it.
  3. Place your favorite cheese in the center and wrap your burger meat around the cheese.
  4. If you are using soft cheese, first make sure your cheese is in a patty shape and not crumbles. Then gently wrap your cheese with the burger meat.
  5. If there are any holes, just grab some ground meat from another part of your burger and cover it up!
  6. Re-shape your burger if you need to.
  7. Grill or cook your burger the way you normally do, trying not to press on it too much. These will take a little longer than normal to cook.

Cheeseburger Casserole

Ingredients

  • ½ pound ground beef
  • 6 large eggs
  • 2 ounces shredded cheese
  • ½ tsp salt
  • ½ tsp garlic
  • ½ tsp coconut aminos (optional)
  • ½ tsp onion powder
  • ¼ tsp hot sauce (optional)
  • ¼ tsp black pepper
  • 1 tsp butter

Instructions

  1. Preheat oven to 325 degrees.
  2. Saute ground beef in buttered pan with seasonings and sauces until beef is cooked through.
  3. Take beef off stove and let cool for 5-10 minutes.
  4. Pour cooked meat into a 6” silicone pan, or any other 6” greased pan.
  5. Whisk eggs in a bowl and stir in shredded cheese.
  6. Pour egg and cheese mixture over the beef and lightly stir it.
  7. Bake for 40 minutes. Let cool 5-10 minutes and enjoy.
  8. You can easily double this recipe and use a larger pan, keep in mind it will take longer to cook.

Carnivore Hidden Treasure Meat Rounds

Excellent for holidays, birthday parties or special occasions!

Makes 4 rounds

 

Ingredients 

  • 1lbs ground meat (Beef pictured) 
  • 4 quail eggs
  • 4 slices of bacon
  • 4 small squares of cheese (Optional, pictured: Gouda)
  • 1 tsp lard

Instructions

  1. Step 1: Hard boil quail eggs (around 6 min).
  2. Step 2: prepare ground meat by separating into 4 even mounds.
  3. Step 3: Peel quail eggs and place into center of ground meat rounds. Fold and mold until quail egg is fully covered.
  4. Step 4: Optional. Place Cheese square on top of the round gently pressing into the top.
  5. Step 5: After all 4 are molded into round mounds wrap each in 1 strip of bacon. Place bottom of the round on the center of the strip. Folding the ends over the top. Tucking the opposing ends under one another in a loose knot.
  6. Step 6: Use 1 tsp of lard to grease bottom of baking pan. Place rounds into baking pan and bake for 1 hour 45 min at 350 degrees.
  7. Set your timer for the 1 hour mark you will need to pour off excess fat (preferably into container to save for later use).
  8. Slice down the center to reveal your delicious carnivore surprise!

Hamburger Helper

Ingredients

  • 1 pound ground beef (or your favorite ground meat)
  • 2 ounces shredded cheese
  • 6 ounces cream cheese
  • 1 tsp garlic
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp butter

 

Instructions

  1. Begin to saute the ground beef in a heated pan, crumbling it up.
  2. Stir in the seasonings.
  3. Once the meat is cooked, turn the heat down and stir in the cream cheese.
  4. Let lightly simmer for about 5 minutes.
  5. Turn off the heat and stir in the shredded cheese.

You can also add cut up egg noodles if you want a noodle feel. If you add 2-4 ounces of noodles, you may need about 2 more ounces more of cream cheese.

Loaded Scrambled Eggs

Ingredients

  • 8 eggs
  • 1 pound sausage
  • 4 pieces of bacon, chopped
  • 2 ounces of your favorite cheese or cottage cheese (optional)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp butter or tallow
  • Saute and crumble your sausage in a large pan.

Instructions

  1. Whisk eggs with salt and pepper.
  2. Turn heat down to medium-low.
  3. Add butter to the pan with the sausage and then pour in the whisked eggs.
  4. As the eggs are cooking add in chopped bacon pieces.
  5. Continue to stir and cook until the eggs are cooked to your liking.
  6. If using cheese, stir in or top off with cheese once your scramble is finished cooking.
