Simple Skillet Steak (inspired by Victorian recipe)

Incredibly easy. Quite possible the easiest and most delicious way to enjoy a hearty steak.
 
Prep time: 5 min
Cook time: 10 min
Pre heat oven: 500 degrees (Place skillet in to heat with oven)
 
Ingredients
  • 1 steak of your choice (I used a delicious fatty top round)
  • 1 stick of butter
  • 1 cast iron skillet
Instructions
  1. If you wish to rub your steak, do so before it goes in. Carefully with proper protection while the hot skillet is still on the oven wrack place the stick of butter in the skillet. It will begin to melt immediately.
  2. Place steak in the skillet carefully using tongs.
  3. Push wrack back in then close the oven for 2.5 minutes.
  4. Quickly flip the steak and then let cook for another 2.5 minutes. This should leave a thick cut medium rare. If cooking a thinner cut shave off a little time.

“Pimento” Cheese

Ingredients

6 ounces shredded Pepperjack cheese

6 ounces softened cream cheese

2 ounces mayo or sour cream

1 tsp hot sauce (optional)

1 tsp coconut aminos (optional)

Directions

No need to add pimentos when you can just use pepperjack cheese! Thoroughly combine all ingredients. Let chill for at least 1 hour. Enjoy as you would with regular pimento! Great on burgers or stuffed in burgers! Top your meatzas with it, shape into a ball and cover it in bacon bits then and take it to your next party! Put it in your next omelette.

The possibilities are endless! Feel free to change the cheese out or add your favorite seasonings!

Goat Cheese Prosciutto Quiche

4 eggs

½ cup cream

4 ounce goat cheese

2 tbs mayonnaise (optional)

2 folio cheddar cheese shells or 4 ounces shredded cheese

3 ounces prosciutto

Pinch of salt

Preheat your oven to 350 degrees. Layer your 2 cheese shells in the bottom of a 6” sillicon round pan. Bake cheese for 10 minutes. Let cool.

Thoroughly whisk eggs, cream, mayo and salt together. Once cheese crust has cooled, spread half the goat cheese onto the crust, layer with prosciutto and then layer the goat cheese and prosciutto again. Slowly pour your egg mixture over the layers. Place your silicone pan on a sheet pan and bake covered with foil for 30 minutes.


Remove foil and bake for about 10 more minutes or until center is just set. Let cool 10 minutes before slicing.

You can easily double this recipe to use a larger baking pan like a pie pan. If doing so, check at 40 minutes instead of 30 minutes.

Creamy Cheese Soup

8 ounces cream cheese

4 ounces shredded cheddar

1 cup chicken broth

1 tsp garlic powder

¼ tsp salt or more to taste

¼ tsp black pepper


Combine cream cheese and broth in a pot and heat up to soften the cheese on low heat. This will take about 10 minutes. After the cream cheese has softened with the broth, use an immersion blender to smooth the soup out. Or you can just pour into the blender and blend for 1 minute.

Add soup back to the pot on low heat. Stir in seasonings and slowly stir in the shredded cheese. Continue to cook on low while stirring until cheese is melted. If the soup is too thick for you, you can add more broth.

This soup is great on its own or add your own toppings or mix ins! Good ideas are bacon bits, cheese chips or diced chicken!

Italian Wedding Soup

Makes about 2 servings.

 

Ingredients:

 

Meatballs

  • 1 lb ground beef, ground pork or both
  • 1 egg
  • 1 tsp garlic
  • 1 tsp salt
  • 1 oz crushed parmesan crisps or shredded parmesan
  • ½ tsp black pepper
  • 2 tbs dried parsley
  • 1 tsp onion powder

Soup

  • 6-8 cups chicken broth
  • 2 eggs
  • 2 tbs shredded parmesan

Instructions

  • Combine all meatball ingredients.
  • Divide meat and roll into 16 meatballs. Set aside.
  • Whisk 2 eggs and 2 Tbs parmesan.
  • Heat up broth to a simmering boil.
  • Drop in meatballs and cook about 8 minutes, or until they are just cooked.
  • Stir in whisked egg and parmesan mixture, while continuously stirring to make into threaded noodles.

If it does not turn to noodles, that’s okay. It still tastes great!

Cream Cheese Crepes

Ingredients

4 ounces cream cheese

4 eggs

1 Tbs water

¼ tsp baking soda*

¼ tsp vanilla extract

Pinch of salt

Butter or ghee for cooking

 

Instructions

  • Blend all ingredients thoroughly in a blender ensuring there are no cream cheese clumps.
  • Heat your non-stick pan to medium-low heat.
  • Melt about ½ tsp butter.
  • Pour some of the batter into your heated pan and swirl to fill to the edges.
  • Let cook about 2-3 minutes or until somewhat set on top, flip and continue to cook for another 30 seconds.

Enjoy as is or fill and wrap or fold with your favorite fillings.

 

Filling idea options:

  • Soft plain or herbed butter
  • Soft cream cheese
    Cooked bacon bits and cream cheese mixed together
  • Cooked sausage and cheese

Makes about 6 crepes if using an 8” pan.

 

*You can make this without baking soda, but the reaction from combining the baking soda and cream cheese creates a creamier and slightly fluffier end product that will remind you more of a traditional crepe instead of an egg pancake.

Philly Cheesesteak

Makes 2 sandwiches.

 

Ingredients

 

  • 4 pieces of your favorite carnivore bread (this goes well with chicken buns)
  • 12-16 ounces boneless ribeye or flank
  • 2-4 pieces of provolone
  • 2 tsp onion flakes or powder
  • Salt
  • Black Pepper
  • 1 tsp butter

 

Instructions

  1. Freeze your steak 20 minutes. 
  2. Remove from freezer and slice as thin as you can.
  3. Season your meat with onion, salt and black pepper.
  4. Make your steak into 2 piles.
  5. Heat your cast iron to medium-high heat.
  6. Once your pan is hot, grease with butter.
  7. Take your 2 piles of meat and sear them in the hot buttered pan.
  8. Do not stir them in the pan, you want them to keep the shape they are in.
  9. After they have a nice sear on one side, take a spatula and carefully flip them over.
  10. Top meat piles with a slice of cheese on each stack. Cover with a lid or a piece of foil over the pan and let the cheese melt.
  11. Once the cheese is melted, take your pile of meat and stack it in between your carnivore bread.

Eggs Benedict

Ingredients

  • 4 pieces of your favorite carnivore bread (this dish goes best with chicken buns)
  • 4 thick slices of sugar free ham
  • 4 slices of cooked bacon (optional)
  • 4 eggs, fried or poached
  • 1 batch homemade hollandaise sauce
  • Paprika or hot sauce

Instructions

  1. The best way to poach eggs is by ensuring the water is simmering hot and add a dash of vinegar to prevent eggs from shredding. Using fresh eggs is best, but not necessary. Do not salt the water, this will cause the whites to shred. When placing the eggs in water, first crack them into a small cup or ramekin, then drop them in carefully and as close to the water as you can. Let cook for about 3-4 minutes. Remove from the water and set aside until ready to use.
  2. You can also just pan fry your eggs, if you don’t care to have poached eggs. Either way it’s delicious!
  3. Layer from the bottom to the top: carnivore bread, ham, bacon, poached egg, hollandaise sauce all topped with a sprinkle of paprika or hot sauce for color.

Feel free to get creative and change the meats to sausage patties or turkey slices; you could even add a slice of cheese!


Serves 2.

Sausage, Egg and Cheese Sammie

Ingredients

  • 6 sausage patties, homemade or store bought 
  • 4 eggs
  • ½ Tbs cream, optional
  • ¼ tsp salt
  • 3 slices of your favorite cheese
  • 3-6 slices of bacon, cooked (Optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Whisk eggs with cream and salt. Pour into a 8” X 8” silicone pan.
  3. Bake for 15 minutes. Remove eggs from pan and slice into 3 strips.
  4. Cook sausage accordingly.
  5. Layer sausage with cheese, folded egg slice, cooked bacon and second sausage piece.

Makes 3 sammies.

Grilled Cheese

Ingredients

  • Your favorite carnivore bread (Chicken buns or bacon weave crusts work best for this recipe)
  • 2-4 ounces of your favorite gooey cheese or a combination of cheeses (cheddar, mozzarella, pepperjack, brie, etc.) *Please note, 4 ounces of cheese is a THICK amount of cheese!*

 

Instructions

Making a carnivore grilled cheese is just as easy as making your “traditional” grilled cheese!

  1. Heat your pan to medium-high heat. (Medium heat if you are using 4 ounces of cheese)
  2. No butter should be needed! Especially if you’re using bacon weaves!
  3. Heat the inside part of your “bread” for about 30-45 seconds.
  4. Flip your bread over and layer your cheese and top with the other heated up piece of “bread”.
  5. Grill your sandwich until the cheese starts getting melted. Carefully flip sandwich over to melt the other half of the cheese.
  6. Remove from pan and enjoy!
